Producing Absinthe in Georgia

A friend of mine and I went onto the plains of Georgia by car to pick Artemisia Absinthe, which is commonly known as Wormwood.

These plants were then hung up to dry for a month.

In the roof of this big house.

Then the plants are distilled with alcohol to produce home made absinthe. My friend has a small company selling this in Tbilisi. He also produces Champagne, red wine and port using local grapes.
